Olibe Organic Extra Virgin Olive Oil is made exclusively from typical Sicilian olive varieties - Moresca, Nocellara, and Biancolilla - cultivated by Società Agricola Bimmisca. The 2024 harvest offers a robust yet smooth flavor, with notes of artichoke, green tomato, almond, and a peppery finish. Low in acidity and high in polyphenols, this oil may be used for a variety of culinary dishes, including as a dressing for salads and bruschetta or enhancing roasted vegetables, poultry, steak, and soups.
Founded in 2011, Società Agricola Bimmisca is a Sicilian farm located near Noto, dedicated to producing organic extra virgin olive oil. The farm oversees every stage of production, from harvesting to packaging, with a strong commitment to sustainability and responsible land stewardship. Olive trees are cultivated organically with minimal soil disruption, and harvesting generally takes place in early September to maintain low acidity and higher polyphenol levels. The olives are cold-pressed within hours of harvesting, using strictly controlled temperatures. The resulting oil is decanted unfiltered for a month before being bottled.
